Ingredients
- 28 oz frozen french fries
- 1 lb ground beef (80/20)
- 15 oz canned kidney beans
- 8 oz canned tomato sauce
- 1 tbsp chili powder
- 1 1/2 tsp ground cumin
- 1 yellow onions
- 8 oz shredded cheddar cheese
- 1 1/2 tsp kosher salt
- 1/2 bunch green onions / scallions(optional)
- 1/2 cup sour cream(optional)
Method
Heat the oven to 425F and spread the fries on a large sheet pan. Bake 25 to 30 minutes until crisp, turning once.
Meanwhile brown the beef with the diced onion in a skillet over medium-high, about 8 minutes.
Stir in the chili powder, cumin, and salt, then the tomato sauce and drained kidney beans.
Simmer 10 minutes until thick, mashing a few beans against the side of the pan.
Spoon the chili over the hot fries, scatter the cheddar on top, and return to the oven 4 minutes to melt.
Finish with scallions and sour cream.
