Glazed Meatloaf

Ingredients

  • 1 1/2 lb ground beef (80/20)
  • 3/4 cup plain breadcrumbs
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 yellow onions
  • 3 clove garlic
  • 1 tbsp worcestershire sauce
  • 6 tbsp ketchup
  • 2 tbsp brown sugar
  • 2 tsp kosher salt
  • 1 tsp ground black pepper

Method

  1. Heat the oven to 375F. Soak the breadcrumbs in the milk for 5 minutes.

  2. Grate the onion into a bowl and add the beef, soaked crumbs, eggs, minced garlic, worcestershire, salt and pepper.

  3. Mix with your hands just until combined. Overworking it makes it tough.

  4. Shape into a loaf on a foil-lined sheet pan.

  5. Stir the ketchup and brown sugar together and brush half over the loaf. Bake 40 minutes.

  6. Brush on the rest of the glaze and bake 20 minutes more, to 160F. Rest 10 minutes before slicing.
