Ingredients

  • 1 1/2 lb ground beef (80/20)
  • 4 hamburger buns
  • 8 american cheese slices
  • 1 yellow onions
  • 4 oz dill pickle spears
  • 4 tbsp mayonnaise
  • 3 tbsp ketchup
  • 2 tbsp unsalted butter
  • 2 tsp kosher salt
  • 1 tsp ground black pepper

Method

  1. Divide the beef into 8 loose balls. Do not compact them.

  2. Butter the cut sides of the buns and toast them in a skillet until golden. Set aside.

  3. Get a cast-iron skillet very hot. Place two beef balls in the pan and smash each flat with a stiff spatula.

  4. Season with salt and pepper and cook 2 minutes until a dark crust forms, then flip, add a slice of cheese, and cook 1 minute more. Repeat with the rest.

  5. Mix the mayonnaise and ketchup into a quick burger sauce.

  6. Stack two patties per bun with sauce, thin-sliced raw onion, and pickles.
