Ingredients

  • 45 oz canned cannellini beans
  • 2 french baguette
  • 6 clove garlic
  • 1/2 oz fresh rosemary
  • 15 oz canned diced tomatoes
  • 6 tbsp extra virgin olive oil
  • 1 cup vegetable broth
  • 1/2 tsp crushed red pepper flakes
  • 2 tsp kosher salt
  • 1 lemon(optional)

Method

  1. Warm 4 tablespoons olive oil in a wide skillet over medium-low with four sliced garlic cloves, the chopped rosemary, and the red pepper flakes. Cook 3 minutes until fragrant.

  2. Add the diced tomatoes and cook 5 minutes until they thicken.

  3. Stir in the drained beans and the broth and simmer 10 minutes, mashing about a quarter of the beans to make the pot creamy. Season with salt.

  4. Slice the baguettes on a bias, brush with the remaining oil, and toast under the broiler until golden.

  5. Rub the hot toasts with a halved raw garlic clove.

  6. Spoon the beans over the toasts and finish with a squeeze of lemon and more olive oil.
