Ingredients

  • 15 oz canned cannellini beans
  • 28 oz canned diced tomatoes
  • 6 cup vegetable broth
  • 6 oz elbow macaroni
  • 1/2 lb carrots
  • 1/2 bunch celery
  • 1 yellow onions
  • 1 zucchini
  • 4 clove garlic
  • 3 tbsp extra virgin olive oil
  • 2 tsp italian seasoning blend
  • 2 tsp kosher salt

Method

  1. Cook the diced onion, carrot, and celery in the olive oil over medium heat for 8 minutes until softened.

  2. Add the minced garlic and Italian seasoning and cook 1 minute.

  3. Pour in the diced tomatoes and broth, add the salt, and bring to a simmer.

  4. Add the drained white beans and the diced zucchini and simmer 12 minutes.

  5. Stir in the dry macaroni and cook 9 minutes more, until the pasta is tender.

  6. Taste for salt and finish each bowl with a drizzle of olive oil.
