Diner Cheeseburgers with Special Sauce

Ingredients
- 1 1/2 lb ground beef (80/20)
- 4 hamburger buns
- 8 american cheese slices
- 4 tbsp mayonnaise
- 2 tbsp ketchup
- 4 oz dill pickle spears
- 1 iceberg lettuce
- 2 tbsp salted butter
- 2 tsp kosher salt
- 1 tsp ground black pepper
- 1/2 yellow onions(optional)
Method
Stir the mayonnaise, ketchup, and 2 tablespoons of finely chopped pickle together for the special sauce.
Divide the beef into four loose patties, pressing a shallow dimple into the center. Season both sides with salt and pepper.
Butter the cut sides of the buns and toast them face down in a skillet until golden. Set aside.
Heat the skillet over medium-high and cook the patties 4 minutes, flip, top each with two slices of cheese, and cook 3 minutes more.
Build the burgers with sauce on both buns, shredded iceberg, the patty, pickle slices, and thin raw onion.
