Steak Salad with Feta and Red Onion
Warm flank steak fanned over greens with feta, red onion, and a balsamic dressing.

Ingredients
- 1 1/2 lb flank steak
- 8 oz spring mix salad greens
- 4 oz crumbled feta cheese
- 1 red onion
- 10 oz cherry tomatoes
- 3 tbsp balsamic vinegar
- 1 tbsp dijon mustard
- 5 tbsp extra virgin olive oil
- 2 tsp kosher salt
- 1 tsp ground black pepper
Method
Season the flank steak generously with salt and pepper and let it sit 10 minutes at room temperature.
Whisk the balsamic vinegar, Dijon, and 4 tablespoons olive oil with a pinch of salt.
Heat the remaining oil in a heavy skillet over high and sear the steak 5 minutes per side for medium-rare.
Rest the steak 10 minutes, then slice very thinly against the grain.
Toss the greens, halved tomatoes, and thinly sliced red onion with most of the dressing.
Fan the steak over the salad, crumble the feta on top, and spoon over the remaining dressing.
