Chicken Enchilada Skillet
All the flavor of enchiladas with none of the rolling, finished with melted cheese under the broiler.

Ingredients
- 1 1/4 lb boneless chicken breast
- 15 oz canned red enchilada sauce
- 8 corn tortillas
- 15 oz canned black beans
- 6 oz shredded mexican cheese blend
- 1 yellow onions
- 1 tbsp extra virgin olive oil
- 1 1/2 tsp ground cumin
- 1 tsp kosher salt
- 1/2 bunch cilantro(optional)
Method
Heat the olive oil in a large oven-safe skillet over medium-high. Cook the diced onion 4 minutes.
Add the chicken cut into half-inch pieces, the cumin, and the salt. Cook 7 minutes until browned and cooked through.
Stir in the drained black beans and the enchilada sauce and bring to a simmer.
Cut the corn tortillas into wide strips and fold them into the skillet. Simmer 5 minutes so they soften and soak up the sauce.
Scatter the cheese over the top and run the skillet under the broiler for 3 minutes until melted and spotted brown.
Top with cilantro and serve straight from the pan.
