Ingredients

  • 12 corn tortillas
  • 32 oz canned refried beans
  • 6 oz shredded mexican cheese blend
  • 1 iceberg lettuce
  • 1/2 lb roma tomatoes
  • 3 tbsp vegetable oil
  • 1 tsp ground cumin
  • 8 oz jarred salsa
  • 1/2 cup sour cream(optional)
  • 1 avocado(optional)

Method

  1. Heat the oven to 425F. Brush both sides of the tortillas with oil and lay them on sheet pans.

  2. Bake 8 to 10 minutes, flipping once, until stiff and lightly browned.

  3. Warm the refried beans in a saucepan with the cumin and a splash of water until spreadable.

  4. Spread the beans over the crisp tortillas and top with the cheese.

  5. Return to the oven 3 minutes to melt.

  6. Top with shredded lettuce, diced tomato, salsa, sour cream, and avocado.
