Refried Bean Tostadas

Ingredients

  • 32 oz canned refried beans
  • 12 corn tortillas
  • 3 tbsp vegetable oil
  • 6 oz shredded mexican cheese blend
  • 1 iceberg lettuce
  • 1/2 lb roma tomatoes
  • 1 tsp ground cumin
  • 8 oz jarred salsa
  • 1 avocado(optional)
  • 1/2 cup sour cream(optional)

Method

  1. Heat the oven to 425F. Brush the tortillas on both sides with oil and lay them on sheet pans.

  2. Bake 8 to 10 minutes, turning once, until crisp and lightly browned.

  3. Warm the refried beans in a saucepan with the cumin and a splash of water until spreadable.

  4. Spread the beans on the hot tostadas and scatter the cheese over so it softens.

  5. Top with shredded lettuce and diced tomato.

  6. Finish with salsa, sliced avocado and sour cream.
