Pinto Bean Tostada Salad
Smashed cumin pintos on crisp corn tortillas under a lime-dressed cabbage and avocado salad.

Ingredients
- 30 oz canned pinto beans
- 12 corn tortillas
- 1/2 green cabbage
- 2 avocado
- 3 lime
- 2 tsp ground cumin
- 1 1/2 tsp chili powder
- 5 tbsp extra virgin olive oil
- 1/2 red onion
- 2 tsp kosher salt
- 1/2 bunch cilantro(optional)
Method
Heat the oven to 425F. Brush the corn tortillas on both sides with 2 tablespoons oil and bake 10 to 12 minutes, turning once, until crisp.
Warm the drained pintos in a skillet with 1 tablespoon oil, the cumin, chili powder, and salt, mashing them coarsely with a splash of water.
Shred the cabbage thinly and slice the red onion.
Toss the cabbage and onion with the juice of two limes, the remaining oil, and a pinch of salt.
Spread the beans over the crisp tortillas.
Pile the slaw and sliced avocado on top, add cilantro, and finish with the last lime.
