Loaded Black Bean Sweet Potatoes
Baked sweet potatoes split and topped with spiced black beans, corn, and avocado.

Ingredients
- 3 lb sweet potatoes
- 30 oz canned black beans
- 8 oz frozen sweet corn
- 2 avocado
- 2 lime
- 2 tsp ground cumin
- 1 1/2 tsp chili powder
- 1 red onion
- 3 tbsp extra virgin olive oil
- 1 1/2 tsp kosher salt
- 1/2 bunch cilantro(optional)
Method
Heat the oven to 425F. Prick the sweet potatoes all over, rub with 1 tablespoon oil, and bake on a sheet pan 45 to 50 minutes until completely soft.
Cook the diced red onion in the remaining oil over medium for 5 minutes.
Add the drained beans, the corn, the cumin, the chili powder, and the salt. Cook 6 minutes, mashing lightly.
Stir in the juice of one lime.
Split the potatoes open and fluff the insides with a fork.
Pile in the bean mixture and top with sliced avocado, cilantro, and the remaining lime.
