Beef Tapa with Garlic Rice and Egg

Ingredients
- 1 1/4 lb top sirloin steak
- 4 tbsp soy sauce
- 2 tbsp white distilled vinegar
- 1/4 cup brown sugar
- 8 clove garlic
- 1 1/2 cup jasmine rice
- 4 large eggs
- 4 tbsp vegetable oil
- 1 tsp ground black pepper
Method
Slice the beef as thinly as you can across the grain and toss it with the soy sauce, vinegar, brown sugar, half the minced garlic, and the pepper. Leave it 15 minutes, or overnight in the fridge.
Cook the rice according to package directions and spread it out to cool and dry.
Fry the remaining minced garlic in 2 tablespoons of oil over medium heat until pale gold, about 2 minutes. Watch it closely, as it burns in seconds.
Add the cooled rice to the garlic oil and fry 5 minutes, breaking up clumps, until each grain is coated and lightly toasted.
In a very hot skillet, cook the beef in a single layer for 2 minutes a side until caramelized at the edges. Work in batches so it sears rather than steams.
Fry the eggs in the remaining oil and build each plate with rice, beef, and an egg.
