Chocolate Chip Oat Muffins

Ingredients
- 1 1/2 cup all-purpose flour
- 1 cup rolled oats
- 3/4 cup semi-sweet chocolate chips
- 1/2 cup brown sugar
- 2 large eggs
- 1 cup whole milk
- 6 tbsp unsalted butter
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp vanilla extract
- 1/2 tsp kosher salt
Method
Heat the oven to 400F and line a twelve-cup muffin tin.
Soak the oats in the milk for 10 minutes so they soften and the muffins do not come out dry.
Whisk the melted butter, brown sugar, eggs and vanilla into the oat mixture.
Fold in the flour, baking powder, baking soda and salt until just combined, then fold through the chocolate chips. Do not overmix or the muffins toughen.
Divide between the cups and bake 20 to 22 minutes, until risen and springy in the middle.
Cool in the tin for 5 minutes before turning them out.
