Coffee-Rubbed Flank Steak

Ingredients
- 1 1/2 lb flank steak
- 3/8 oz ground coffee
- 1/8 cup brown sugar
- 2 tsp smoked paprika
- 1 1/2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp garlic powder
- 2 tsp kosher salt
- 1 tsp ground black pepper
- 2 tbsp extra virgin olive oil
Method
Mix the ground coffee, brown sugar, smoked paprika, chili powder, cumin, garlic powder, salt and pepper into a rub. The coffee reads as bitter chocolate here, not as coffee.
Pat the steak dry, rub it with a tablespoon of the oil, then press the rub onto both sides. Leave it at room temperature for 30 minutes.
Heat the remaining oil in a heavy skillet or grill pan until it is just short of smoking.
Sear the steak 4 to 5 minutes a side for medium-rare. The sugar in the rub will darken fast, so keep the heat at high rather than fierce.
Rest the steak on a board for a full 10 minutes. Cutting early loses the juices onto the board.
Slice thinly ACROSS the grain and spoon the resting juices back over.
