Ingredients

  • 10 large eggs
  • 1 lb yukon gold potatoes
  • 3 tbsp extra virgin olive oil
  • 1 yellow onions
  • 5 oz baby spinach
  • 4 oz shredded cheddar cheese
  • 1/3 cup whole milk
  • 2 clove garlic
  • 1 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper

Method

  1. Heat the oven to 375F. Dice the potatoes small and cook them in the olive oil in an oven-safe skillet, covered, 12 minutes, until tender.

  2. Add the sliced onion and cook 5 minutes, then the garlic.

  3. Add the spinach in handfuls and let it wilt, then spread everything evenly in the pan.

  4. Beat the eggs with the milk, salt and pepper and pour them over.

  5. Cook undisturbed 3 minutes on the stove until the edges set, then scatter the cheddar on top.

  6. Bake 15 minutes, until just set in the middle. Rest 5 minutes and cut into wedges.
