Ingredients

  • 16 oz cremini (baby bella) mushrooms
  • 1 1/2 cup long grain white rice
  • 3 tbsp unsalted butter
  • 2 tbsp extra virgin olive oil
  • 1 yellow onions
  • 4 clove garlic
  • 1/2 cup dry white wine (cooking)
  • 3 1/2 cup vegetable broth
  • 1 tsp dried thyme
  • 3 oz grated parmesan cheese
  • 1/4 bunch fresh flat-leaf parsley(optional)

Method

  1. Slice the mushrooms and brown them hard in the olive oil in a wide skillet, 10 minutes, until all the water has cooked off. Set aside.

  2. Melt the butter and cook the diced onion 5 minutes, then the garlic and thyme.

  3. Stir in the rice to coat, then add the wine and let it cook away.

  4. Add the broth, bring to a simmer, cover and cook 18 minutes on low.

  5. Return the mushrooms, cover again and rest off the heat 5 minutes.

  6. Stir in the parmesan, season with salt and pepper, and finish with parsley.
