Weeknight Beef Bolognese with Rigatoni
A quick meat sauce built on soffritto and crushed tomatoes, tossed with rigatoni.

Ingredients
- 1 lb ground beef (80/20)
- 12 oz rigatoni
- 28 oz canned crushed tomatoes
- 1 yellow onions
- 1/2 lb carrots
- 1/4 bunch celery
- 4 clove garlic
- 2 oz tomato paste
- 2 tbsp extra virgin olive oil
- 1/2 cup whole milk
- 2 tsp kosher salt
- 2 oz grated parmesan cheese
Method
Finely chop the onion, carrot, and celery. Cook them in the olive oil over medium heat for 10 minutes until soft and sweet.
Add the minced garlic and tomato paste and cook 2 minutes.
Raise the heat, add the ground beef, and brown it well, breaking it up as it cooks.
Pour in the milk and let it cook away, about 3 minutes. This is what makes the sauce taste rich.
Add the crushed tomatoes and salt. Simmer uncovered 20 minutes, stirring now and then.
Boil the rigatoni and toss it with the sauce and a splash of pasta water. Serve with Parmesan.
