Meatball Subs with Melted Mozzarella
Split rolls packed with saucy meatballs under a blistered blanket of melted mozzarella.

Ingredients
- 1 1/4 lb ground beef (80/20)
- 6 hot dog buns
- 24 oz jarred marinara sauce
- 6 oz shredded mozzarella
- 1/2 cup plain breadcrumbs
- 1 large eggs
- 1 oz grated parmesan cheese
- 3 clove garlic
- 2 tsp italian seasoning blend
- 1 tbsp extra virgin olive oil
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
Method
Mix the beef with the breadcrumbs, egg, parmesan, minced garlic, italian seasoning, salt and pepper. Handle it lightly; working it hard makes the meatballs dense.
Roll into 18 meatballs about an inch and a half across.
Heat the oil in a wide skillet and brown the meatballs on all sides, about 6 minutes. They do not need to be cooked through yet.
Pour the marinara over, cover, and simmer gently for 18 minutes until the meatballs are cooked through and the sauce has thickened.
Heat the broiler. Split the rolls, open them on a tray, and fill each with three meatballs and a spoonful of sauce.
Scatter the mozzarella over and broil 2 to 3 minutes, until it melts and blisters. Watch them; they turn from golden to burnt quickly.
