Cajun Chicken Pasta

Ingredients
- 1 1/4 lb boneless chicken breast
- 12 oz penne pasta
- 4 tsp cajun / creole seasoning
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow onions
- 1 cup heavy whipping cream
- 2 oz grated parmesan cheese
- 2 tbsp extra virgin olive oil
- 3 clove garlic
- 1 tsp kosher salt
Method
Boil the penne in salted water until just shy of tender. Reserve a cup of pasta water and drain.
Slice the chicken into strips and toss with 3 teaspoons of the Cajun seasoning.
Heat the oil in a large skillet over medium-high and sear the chicken 5 to 6 minutes until browned. Move to a plate.
Add the sliced peppers, onion, and garlic to the pan and cook 5 minutes until softened.
Pour in the cream and the remaining Cajun seasoning, simmer 3 minutes, then stir in the Parmesan.
Return the chicken with the pasta and toss, loosening with pasta water until the sauce coats every piece.
