Cajun Mushroom Dirty Rice
Browned mushrooms and the trinity cooked down with rice and Cajun spice into a smoky one-pan dinner.

Ingredients
- 20 oz cremini (baby bella) mushrooms
- 1 1/2 cup long grain white rice
- 3 cup vegetable broth
- 1 yellow onions
- 1/2 bunch celery
- 1 green bell pepper
- 4 clove garlic
- 4 tsp cajun / creole seasoning
- 3 tbsp extra virgin olive oil
- 1 1/2 tsp kosher salt
- 1/2 bunch green onions / scallions(optional)
- 3 tsp hot sauce (louisiana style)(optional)
Method
Pulse the mushrooms in a food processor or chop them very finely so they resemble ground meat.
Heat the oil in a wide pot over medium-high and cook the mushrooms 10 minutes, stirring rarely, until they release their water and then brown deeply.
Add the diced onion, celery, and green pepper and cook 6 minutes until softened.
Stir in the garlic and Cajun seasoning and cook 1 minute, then add the rice and toast for another minute.
Pour in the broth, season with salt, cover, and simmer 20 minutes until the rice is tender.
Rest 5 minutes off the heat, fluff with a fork, and top with scallions and hot sauce.
