Ingredients

  • 12 oz spaghetti
  • 20 oz cherry tomatoes
  • 5 clove garlic
  • 3/4 oz fresh basil
  • 3 oz grated parmesan cheese
  • 5 tbsp extra virgin olive oil
  • 1/2 tsp crushed red pepper flakes
  • 2 tsp kosher salt
  • 1/2 tsp ground black pepper

Method

  1. Boil the spaghetti in well-salted water and reserve a cup of pasta water before draining.

  2. Heat 3 tablespoons olive oil in a wide skillet over medium. Add the sliced garlic and red pepper flakes and cook 1 minute.

  3. Add the whole cherry tomatoes and the salt. Cook 8 to 10 minutes, pressing them with a spoon, until they burst and collapse into a rough sauce.

  4. Add the drained spaghetti and a big splash of pasta water and toss hard so the sauce emulsifies and clings.

  5. Take the pan off the heat and add the torn basil, the Parmesan, and the remaining olive oil.

  6. Finish with black pepper and serve immediately.
