Rosemary Focaccia

Ingredients
- 3 1/2 cup all-purpose flour
- 2 1/4 tsp active dry yeast
- 6 tbsp extra virgin olive oil
- 1/3 oz fresh rosemary
- 3 tsp kosher salt
- 1 tbsp honey
- 3 clove garlic(optional)
- 6 oz cherry tomatoes(optional)
Method
Stir the honey into 1.5 cups of warm water, then the yeast. Leave it 8 minutes; it should go cloudy and smell of bread. If nothing happens the yeast is dead and the loaf will not rise, so start again with a fresh packet.
Mix in the flour and 2 teaspoons of the salt until there is no dry flour left. This is a wet, shaggy dough and it is meant to be; do not add more flour to tidy it up.
Pour 2 tablespoons of the oil over the top, cover the bowl, and leave it somewhere warm for 90 minutes, until doubled and domed.
Pour 2 more tablespoons of oil into a rimmed baking sheet and spread it to the corners. Tip the dough in and fold it over on itself a few times, then leave it 20 minutes so it relaxes enough to stretch.
Press the dough out to the edges of the pan with oiled fingers, pushing all the way down to the metal to make deep dimples. Scatter over the rosemary leaves, the remaining salt, the sliced garlic and the halved tomatoes, then drizzle with the last of the oil.
Bake at 425F for 22 to 25 minutes, until the top is deep gold and the underside is crisp when you lift a corner. Slide it out of the pan onto a rack so the base does not steam soft.
