Creamy Spinach and Mushroom Pasta
Rotini in a light cream sauce with browned mushrooms and plenty of spinach.

Ingredients
- 12 oz rotini
- 16 oz cremini (baby bella) mushrooms
- 5 oz baby spinach
- 3/4 cup heavy whipping cream
- 3 oz grated parmesan cheese
- 4 clove garlic
- 2 tbsp unsalted butter
- 2 tbsp extra virgin olive oil
- 1 tsp dried thyme
- 2 tsp kosher salt
- 1/2 tsp ground black pepper
Method
Boil the rotini in salted water and reserve a cup of the water before draining.
Heat the olive oil and butter in a large skillet over medium-high. Add the sliced mushrooms in one layer and leave them alone for 4 minutes so they brown, then stir and cook 4 minutes more.
Add the minced garlic, thyme, salt, and pepper and cook 1 minute.
Pour in the cream and simmer 3 minutes.
Add the spinach and stir until wilted, then the drained pasta and the Parmesan.
Loosen with pasta water until glossy and serve right away.
