Ingredients

  • 1 1/2 lb boneless chicken thighs
  • 2 tbsp vegetable oil
  • 3 tbsp soy sauce
  • 2 tbsp chili garlic sauce
  • 1/4 cup brown sugar
  • 4 clove garlic
  • 3/4 oz fresh ginger root
  • 1 tbsp toasted sesame oil
  • 1 1/2 cup jasmine rice
  • 1/2 bunch green onions / scallions
  • 1 tbsp sesame seeds(optional)

Method

  1. Cook the rice.

  2. Cut the chicken into large bite-size pieces and sear in the vegetable oil over high heat until browned, 6 minutes.

  3. Stir together the soy sauce, chili garlic sauce, brown sugar, minced garlic and grated ginger.

  4. Pour the sauce into the pan and cook 6 to 8 minutes, tossing, until it reduces to a sticky glaze.

  5. Turn off the heat and stir in the sesame oil.

  6. Serve over rice topped with sliced scallions and sesame seeds.
