Ingredients

  • 3 lb chicken wings
  • 2 tsp baking powder
  • 2 tsp kosher salt
  • 1 tsp ground black pepper
  • 4 tbsp unsalted butter
  • 5 clove garlic
  • 2 oz grated parmesan cheese
  • 1/4 bunch fresh flat-leaf parsley(optional)
  • 1/2 lb carrots(optional)

Method

  1. Heat the oven to 425F and set a rack over a foil-lined sheet pan.

  2. Pat the wings very dry and toss with the baking powder, salt and pepper.

  3. Arrange them on the rack without touching and bake 40 to 45 minutes, turning once, until deep golden.

  4. Melt the butter with the minced garlic over low heat for 2 minutes, without browning it.

  5. Toss the hot wings with the garlic butter and the parmesan.

  6. Scatter parsley over and serve with carrot sticks.
