Ingredients

  • 1 1/4 lb boneless chicken breast
  • 3 tbsp unsalted butter
  • 1 yellow onions
  • 1/4 cup all-purpose flour
  • 2 cup chicken broth
  • 3/4 cup whole milk
  • 12 oz frozen mixed vegetables
  • 1 tsp dried thyme
  • 1/2 tsp ground black pepper
  • 8 refrigerated biscuit dough

Method

  1. Heat the oven to 400F. Cut the chicken into bite-size pieces.

  2. Melt the butter in a large oven-safe skillet, cook the diced onion 4 minutes, then add the chicken and cook until no longer pink.

  3. Sprinkle the flour over and stir one minute, then whisk in the broth and milk. Simmer until it thickens to a gravy.

  4. Stir in the frozen vegetables, thyme, pepper and salt to taste.

  5. Arrange the biscuits over the top, leaving small gaps for steam.

  6. Bake 22 to 25 minutes, until the biscuits are browned and cooked through.
