Ingredients

  • 3 lb russet potatoes
  • 1 1/4 lb boneless chicken breast
  • 8 tbsp barbecue sauce
  • 5 oz shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 bunch green onions / scallions
  • 1 tbsp extra virgin olive oil
  • 1 1/2 tsp kosher salt
  • 1 tsp smoked paprika

Method

  1. Heat the oven to 425F. Scrub the potatoes, rub them with oil and salt, and bake directly on the rack for 55 to 60 minutes until a knife slides in easily.

  2. Meanwhile season the chicken with smoked paprika and salt and bake it on a small sheet pan for 20 minutes, until cooked through.

  3. Shred the chicken with two forks and toss it with the BBQ sauce.

  4. Split the hot potatoes down the middle and fluff the insides with a fork.

  5. Pile in the BBQ chicken and top with cheddar. Return to the oven 3 minutes to melt.

  6. Finish with sour cream and sliced scallions.
