Chicken Teriyaki Rice Bowls
Sticky glazed chicken over rice with steamed broccoli and sesame seeds.

Ingredients
- 1 1/2 lb boneless chicken thighs
- 1 1/2 cup jasmine rice
- 5 tbsp soy sauce
- 1/4 cup brown sugar
- 3/4 oz fresh ginger root
- 3 clove garlic
- 1 tbsp cornstarch
- 1 tbsp vegetable oil
- 12 oz frozen broccoli florets
- 1 tbsp sesame seeds(optional)
- 1/2 bunch green onions / scallions(optional)
Method
Start the rice.
Whisk the soy sauce, brown sugar, grated ginger, minced garlic, cornstarch, and 1/3 cup water into a sauce.
Cut the chicken into bite-size pieces. Brown them in the oil over medium-high for 7 minutes until cooked through.
Pour in the sauce and simmer 2 to 3 minutes, stirring, until it thickens into a glaze that coats the chicken.
Steam the broccoli in the microwave or a covered pan until just tender.
Spoon the chicken and glaze over the rice with the broccoli alongside. Top with sesame seeds and scallions.
