Chilaquiles Rojos with Fried Eggs
Tortilla chips simmered briefly in red salsa so they soften but keep their bite, each plate topped with a fried egg.

Ingredients
- 8 oz tortilla chips
- 16 oz jarred salsa
- 4 large eggs
- 2 tbsp vegetable oil
- 1/2 red onion
- 4 oz shredded mexican cheese blend
- 1/2 cup sour cream
- 1/2 bunch cilantro(optional)
- 1 lime
Method
Warm the salsa in a wide skillet over medium heat until it bubbles, about 3 minutes.
Add the tortilla chips and fold them through the salsa for about 90 seconds, just until they soften at the edges but still hold their shape. Pull the pan off the heat so they do not turn to mush.
Scatter the cheese over the top, cover for a minute, and let it melt.
Fry the eggs in the oil in a second skillet until the whites are set and the yolks still run.
Divide the chilaquiles between four plates and slide an egg onto each.
Finish with thinly sliced red onion, drizzled sour cream, cilantro, and a squeeze of lime.
