Potato Pancakes with Sour Cream
Grated potato fried into crisp lacy pancakes, eaten hot with cold sour cream.

Ingredients
- 2 lb russet potatoes
- 1 yellow onions
- 2 large eggs
- 1/2 cup all-purpose flour
- 2 tsp kosher salt
- 3/4 tsp ground black pepper
- 8 tbsp vegetable oil
- 1 cup sour cream
- 1 bunch green onions / scallions(optional)
Method
Peel and grate the potatoes and onion on the coarse side of a box grater.
Pile them into a clean towel and wring out as much liquid as you can. Dry potato is the difference between crisp and soggy.
Mix with the beaten eggs, flour, salt, and pepper.
Heat a quarter inch of oil in a skillet over medium-high until it shimmers. Drop in spoonfuls and flatten them thin.
Fry 4 minutes a side until deep brown and crisp at the edges, working in batches and topping up the oil as needed.
Drain briefly on paper towels, salt again while hot, and serve with cold sour cream and scallions.
