Baladi Salad with Toasted Pita

Ingredients

  • 1 1/2 lb roma tomatoes
  • 2 cucumber
  • 1 red onion
  • 1 bunch fresh flat-leaf parsley
  • 2 lemon
  • 5 tbsp extra virgin olive oil
  • 3 pita bread
  • 1 tsp ground cumin

Method

  1. Heat the oven to 375F. Tear the pita into rough pieces, toss with one tablespoon of the oil, and bake 8 to 10 minutes until crisp and golden. Cool them.

  2. Chop the tomatoes and cucumber into rough half inch pieces and slice the red onion thinly.

  3. Chop the parsley, stems and all. The stems carry most of the flavour.

  4. Whisk the juice of both lemons with the remaining oil, the cumin and a good pinch of salt.

  5. Toss everything together and taste. It should be sharper than you expect, because the bread will soften it.

  6. Add the pita last, right before it goes to the table, so it stays crisp.
