Egyptian Shakshuka
Eggs poached into a spiced pepper and tomato sauce, cooked in the pan you serve it in. Bread on the table, no plates needed.

Ingredients
- 8 large eggs
- 28 oz canned diced tomatoes
- 2 green bell pepper
- 1 yellow onions
- 2 clove garlic
- 1 1/2 tsp ground cumin
- 1/2 tsp crushed red pepper flakes
- 1/2 bunch fresh flat-leaf parsley
- 3 tbsp extra virgin olive oil
- 4 pita bread
Method
Slice the peppers and onion. Cook them in the oil over medium heat for 10 minutes, until soft and starting to colour at the edges.
Add the crushed garlic, cumin and pepper flakes. One minute, no longer, or the spices catch.
Pour in the tomatoes and simmer 10 minutes until the sauce holds a channel when you drag a spoon through it. Season well.
Make eight hollows with the back of a spoon and crack an egg into each.
Cover and cook 6 to 8 minutes, until the whites are set and the yolks still move when you shake the pan.
Scatter the chopped parsley over and bring the pan to the table with warm pita.
