Ingredients

  • 2 cup rolled oats
  • 4 cup whole milk
  • 1 lb apples
  • 2 tbsp salted butter
  • 1 1/2 tsp ground cinnamon
  • 1/4 cup brown sugar
  • 1/2 tsp kosher salt
  • 1/2 cup raisins(optional)

Method

  1. Put the oats, milk, and salt in a saucepan and bring to a gentle simmer.

  2. Cook 10 to 12 minutes over low heat, stirring often, until the oats swell and the porridge pulls thickly off the spoon. Add a splash more milk if it stiffens too far.

  3. While it cooks, dice the apples and cook them in the butter in a small pan for 6 minutes with the cinnamon and brown sugar, until soft and syrupy.

  4. Spoon the porridge into bowls.

  5. Top each with the warm apples, their syrup, and a scatter of raisins.
