Peanut Butter and Banana Toast

Thick peanut butter on hot toast with sliced banana and a drizzle of honey. Three minutes, and it holds until lunch.

Ingredients

  • 8 whole wheat sandwich bread
  • 8 tbsp peanut butter
  • 1 lb bananas
  • 3 tbsp honey
  • 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt

Method

  1. Toast the bread until it is firm enough to hold the topping without going soggy.

  2. Spread each slice generously with peanut butter while the toast is still hot so it melts into the surface.

  3. Slice the bananas into coins and lay them over in a single layer, pressing lightly so they stick.

  4. Drizzle honey over the top and dust with cinnamon and the barest pinch of salt.

  5. Cut each slice in half and eat right away.
