Sweet Potato and Black Bean Hash with Eggs

Ingredients
- 1 1/2 lb sweet potatoes
- 15 oz canned black beans
- 1 red onion
- 1 red bell pepper
- 4 large eggs
- 3 tbsp extra virgin olive oil
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 1 1/2 tsp kosher salt
- 1/2 bunch cilantro(optional)
- 4 tsp hot sauce (louisiana style)(optional)
Method
Peel and dice the sweet potatoes into half-inch cubes.
Heat the oil in a large skillet over medium-high and add the sweet potato in a single layer. Leave it alone for 5 minutes so it browns rather than steams.
Stir, then add the diced onion and pepper and cook 8 minutes more until the potato is tender at the center.
Fold in the drained black beans, smoked paprika, cumin, and salt and cook 3 minutes.
Make four wells in the hash, crack an egg into each, cover the pan, and cook 5 minutes until the whites set.
Finish with cilantro and hot sauce.
