Molokhia with Chicken

Ingredients
- 4 lb whole chicken
- 28 oz molokhia (jute leaves), frozen
- 8 clove garlic
- 1 bunch cilantro
- 1 yellow onions
- 2 bay leaves
- 3 tbsp unsalted butter
- 2 cup long grain white rice
- 1 lemon
Method
Simmer the chicken with the halved onion and bay leaves in water to cover for 45 minutes, skimming the foam off the top as it rises.
Lift the chicken out and keep it warm. Strain the broth; you need about six cups and it should taste like something on its own.
Bring the broth back to a simmer and stir in the frozen molokhia. Break it up as it thaws and let it cook 10 minutes. Do not let it boil hard or it separates.
Crush the garlic with the chopped cilantro and a pinch of salt to a rough paste.
Fry that paste in the butter for about 40 seconds, until the garlic smells sweet rather than raw. It will spit.
Pour the whole thing into the pot and clap the lid on straight away. That noise is the point of the dish.
Cook the rice, pull the chicken into large pieces, and serve the molokhia ladled over rice with lemon alongside.
