Roz bel Khalta, Egyptian Party Rice
Rice cooked with chicken, vegetables and warm spice. The dish that comes out when there are people to feed and one pot to do it in.

Ingredients
- 2 lb boneless chicken thighs
- 3 cup basmati rice
- 1 yellow onions
- 0.5 lb carrots
- 10 oz frozen green peas
- 3/4 tsp ground cinnamon
- 1 tsp ground black pepper
- 2 bay leaves
- 6 cup chicken broth
- 3 tbsp vegetable oil
Method
Cut the chicken into large pieces and brown them in the oil. Set aside.
Dice the onion and carrots and cook them in the same pot for 6 minutes.
Stir in the rice, cinnamon, black pepper and bay leaves, coating every grain in the fat. This is what keeps it from turning to porridge.
Return the chicken, pour in the broth, and bring to a boil. Taste the liquid now and salt it properly; you cannot fix it later.
Cover and cook on the lowest heat for 20 minutes without lifting the lid.
Scatter the peas over the top, replace the lid, and leave off the heat for 10 minutes.
Fork it through, lifting from the bottom, and serve from the pot.
