Ingredients

  • 1 1/2 lb salmon fillet
  • 2 bunch asparagus
  • 2 tbsp extra virgin olive oil
  • 3 tbsp unsalted butter
  • 4 clove garlic
  • 2 lemon
  • 1 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1/4 bunch fresh flat-leaf parsley(optional)

Method

  1. Heat the oven to 425F. Snap the woody ends off the asparagus.

  2. Toss the asparagus with the olive oil, half the salt and pepper on a sheet pan.

  3. Melt the butter with the minced garlic and the juice of one lemon.

  4. Set the salmon fillets among the asparagus, season them and spoon the garlic butter over.

  5. Roast 12 to 15 minutes, until the salmon flakes at the thickest point.

  6. Serve with the second lemon in wedges and chopped parsley.
