Lentil Bolognese

Ingredients

  • 1 1/4 cup brown/green lentils
  • 3 tbsp extra virgin olive oil
  • 1 yellow onions
  • 1/2 lb carrots
  • 3/8 bunch celery
  • 4 clove garlic
  • 3 oz tomato paste
  • 28 oz canned crushed tomatoes
  • 2 1/2 cup vegetable broth
  • 2 tsp italian seasoning blend
  • 12 oz spaghetti

Method

  1. Finely chop the onion, carrot and celery and cook them in the olive oil 10 minutes until soft.

  2. Add the garlic, italian seasoning and tomato paste and cook until the paste darkens.

  3. Stir in the rinsed lentils, crushed tomatoes and broth.

  4. Simmer 35 to 40 minutes, adding water if it gets too thick, until the lentils are soft.

  5. Season generously with salt and pepper.

  6. Boil the spaghetti and toss it with the sauce and a splash of pasta water.
