Spiced Beef Kofta with Couscous
Cumin-and-parsley beef patties seared hard and served over couscous with yogurt.

Ingredients
- 1 1/4 lb ground beef (80/20)
- 1 1/2 cup couscous
- 1 cup plain greek yogurt
- 1 bunch fresh flat-leaf parsley
- 1 yellow onions
- 4 clove garlic
- 2 tsp ground cumin
- 2 tsp paprika
- 1/2 tsp ground cinnamon
- 2 tbsp extra virgin olive oil
- 1 1/2 tsp kosher salt
- 1 lemon
Method
Grate the onion and squeeze out most of its liquid. Mix it with the beef, chopped parsley, minced garlic, cumin, paprika, cinnamon, and salt.
Shape into 12 oval patties about half an inch thick.
Prepare the couscous with hot water per the package, then fluff with a fork and a drizzle of olive oil.
Sear the kofta in the remaining olive oil over medium-high, 4 minutes per side, until browned and cooked through.
Stir the yogurt with a pinch of salt and a squeeze of lemon.
Serve the kofta over the couscous with the yogurt sauce and lemon wedges.
