Ful Medames
Warm mashed fava-style beans with lemon, garlic, and olive oil, scooped with pita. Cheap, filling, and ready in fifteen minutes.

Ingredients
- 30 oz canned cannellini beans
- 4 tbsp extra virgin olive oil
- 3 clove garlic
- 2 tsp ground cumin
- 2 lemon
- 1/2 lb roma tomatoes
- 1/2 bunch fresh flat-leaf parsley
- 1 tsp kosher salt
- 4 pita bread
Method
Drain the beans but keep a splash of their liquid.
Warm half the olive oil in a saucepan and cook the minced garlic and cumin for 30 seconds, until fragrant but not browned.
Add the beans with a few tablespoons of water and heat through for 5 minutes.
Mash roughly with the back of a spoon, leaving plenty of whole beans for texture. Season with salt and the juice of one lemon.
Spoon into bowls and pour the remaining olive oil over the top.
Scatter chopped tomato and parsley over, add lemon wedges, and serve with warm pita.
