Black Bean Burgers
Smoky mashed black bean patties, pan-fried crisp and served on buns.

Ingredients
- 30 oz canned black beans
- 4 hamburger buns
- 3/4 cup plain breadcrumbs
- 1 large eggs
- 1 yellow onions
- 3 clove garlic
- 2 tsp ground cumin
- 1 1/2 tsp smoked paprika
- 3 tbsp extra virgin olive oil
- 1 1/2 tsp kosher salt
- 1 iceberg lettuce(optional)
- 3 tbsp ketchup(optional)
Method
Drain and rinse the beans, then spread them on a towel and pat very dry. Wet beans make mushy burgers.
Cook the finely diced onion in 1 tablespoon oil for 6 minutes, then add the minced garlic, cumin, paprika, and salt for 1 minute.
Mash the beans in a bowl, leaving about a third of them whole for texture.
Mix in the onion mixture, the breadcrumbs, and the egg. Form into 4 patties and chill 10 minutes.
Fry the patties in the remaining oil over medium heat, 5 minutes per side, until a firm crust forms.
Serve on toasted buns with lettuce and ketchup.
