Grill-Pan Sirloin with Parsley Garlic Sauce
A seared sirloin sliced against the grain and spooned with a punchy raw parsley and garlic sauce.

Ingredients
- 1 1/2 lb top sirloin steak
- 1 bunch fresh flat-leaf parsley
- 4 clove garlic
- 3 tbsp red wine vinegar
- 6 tbsp extra virgin olive oil
- 1/2 tsp crushed red pepper flakes
- 2 1/2 tsp kosher salt
- 1 tsp ground black pepper
- 1 1/2 lb yukon gold potatoes
Method
Boil the potatoes, cut into chunks, in salted water until tender, about 15 minutes. Drain and toss with a little olive oil and salt.
Finely chop the parsley and garlic and stir with the red wine vinegar, 5 tablespoons olive oil, red pepper flakes, and a teaspoon of salt.
Pat the steak very dry and season hard with salt and pepper.
Heat a grill pan over high until smoking. Sear the steak 4 to 5 minutes per side for medium-rare.
Rest the steak 8 minutes on a board, then slice thinly against the grain.
Spoon the parsley sauce over the slices and serve with the potatoes.
