Citrus Mojo Chicken Thighs

Ingredients
- 2 1/2 lb bone-in chicken thighs
- 1 cup orange juice
- 2 lime
- 6 clove garlic
- 1 red onion
- 2 tsp ground cumin
- 2 tsp dried oregano
- 3 tbsp extra virgin olive oil
- 2 tsp kosher salt
- 1/2 tsp ground black pepper
- 1/2 bunch cilantro(optional)
Method
Whisk the orange juice, the juice of one lime, the minced garlic, cumin, oregano, 2 tablespoons of the oil, the salt and the pepper together.
Put the chicken in the marinade skin-side up and leave it in the fridge for at least 30 minutes, or overnight if you have the time.
Heat the oven to 425F. Lift the chicken out and pat the skin dry, keeping the marinade.
Heat the remaining oil in an oven-safe skillet over medium-high. Lay the thighs skin-side down and leave them for 7 minutes, until the skin releases and is deeply browned. Turn them over.
Scatter the sliced red onion around, pour in the reserved marinade, and transfer the pan to the oven for 30 to 35 minutes until cooked through.
Squeeze the second lime over and finish with cilantro.
