Corn Cakes with Melted Cheese
Griddled corn cakes with a crust and a soft middle, split and filled with cheese while hot.

Ingredients
- 2 cup yellow cornmeal
- 1 1/2 tsp kosher salt
- 8 oz shredded mozzarella
- 3 tbsp salted butter
- 3 tbsp vegetable oil
- 1 avocado(optional)
- 6 oz jarred salsa(optional)
Method
Stir the cornmeal and salt into 2.5 cups of warm water and let it stand 5 minutes until it thickens into a soft, moldable dough. Add water a spoonful at a time if it cracks when you shape it.
Divide into eight balls and flatten each into a disc about half an inch thick, smoothing the edges with wet hands.
Heat the oil in a skillet over medium and cook the cakes 6 minutes a side, until a firm golden crust forms and they sound hollow when tapped.
Split each hot cake most of the way through with a knife.
Push cheese and a little butter into the opening and let it melt from the trapped heat for 2 minutes.
Serve with sliced avocado and salsa.
