Baked Macaroni and Cheese

Ingredients

  • 12 oz elbow macaroni
  • 5 tbsp unsalted butter
  • 1/3 cup all-purpose flour
  • 3 cup whole milk
  • 10 oz shredded cheddar cheese
  • 1 tbsp dijon mustard
  • 1 tsp paprika
  • 3/4 cup panko breadcrumbs
  • 1 1/2 tsp kosher salt

Method

  1. Heat the oven to 375F and boil the macaroni two minutes short of done.

  2. Melt 4 tbsp butter in a saucepan, whisk in the flour and cook one minute.

  3. Whisk in the milk gradually and simmer until it thickens enough to coat a spoon.

  4. Off the heat stir in the cheddar, dijon, paprika and salt until smooth, then fold in the macaroni.

  5. Pour into a baking dish. Toss the panko with the last of the melted butter and scatter it over.

  6. Bake 25 to 30 minutes, until golden and bubbling at the edges.
