Skillet Grilled Cheese with Tomato Soup

Ingredients
- 1 sourdough loaf
- 8 oz block cheddar cheese
- 4 oz shredded mozzarella
- 5 tbsp salted butter
- 28 oz canned crushed tomatoes
- 1 1/2 cup vegetable broth
- 1/2 cup heavy whipping cream
- 1 yellow onions
- 3 clove garlic
- 1 1/2 tsp dried basil
- 2 tsp kosher salt
Method
Melt 1 tablespoon butter in a pot and cook the diced onion and garlic 6 minutes until soft.
Add the crushed tomatoes, broth, dried basil, and salt. Simmer 12 minutes, then blend smooth with an immersion blender or mash well.
Stir in the cream and keep warm over low heat.
Cut eight thick slices of sourdough and butter one side of each.
Build four sandwiches butter-side out with sliced cheddar and shredded mozzarella.
Griddle over medium 4 minutes per side, pressing lightly, until deep golden and fully melted. Serve with bowls of soup.
