Broccoli Cheddar Loaded Baked Potatoes
Fluffy baked russets split open and filled with steamed broccoli and a quick cheddar sauce.

Ingredients
- 3 lb russet potatoes
- 1 1/4 lb broccoli crowns
- 10 oz shredded cheddar cheese
- 1 cup whole milk
- 3 tbsp unsalted butter
- 1 1/2 tbsp cornstarch
- 1 tbsp dijon mustard
- 2 tbsp extra virgin olive oil
- 2 1/2 tsp kosher salt
- 1/2 cup sour cream(optional)
Method
Heat the oven to 425F. Prick the potatoes all over, rub with olive oil and salt, and bake directly on the rack 55 to 60 minutes until soft throughout.
Steam the broccoli florets 5 minutes until bright green and just tender, then chop coarsely.
Whisk the cornstarch into the cold milk. Melt the butter in a saucepan, add the milk, and cook over medium, whisking, until thickened, about 3 minutes.
Off the heat, stir in the cheddar a handful at a time until smooth, then the Dijon and salt.
Split each potato, fluff the inside with a fork, and pile in the broccoli.
Pour the cheese sauce over the top and finish with sour cream.
