Broccoli Cheddar Soup

Ingredients

  • 1 1/4 lb broccoli crowns
  • 4 tbsp unsalted butter
  • 1 yellow onions
  • 3/8 lb carrots
  • 1/4 cup all-purpose flour
  • 3 cup vegetable broth
  • 2 cup whole milk
  • 8 oz shredded cheddar cheese
  • 1 tsp dijon mustard
  • 1 french baguette(optional)

Method

  1. Melt the butter and cook the diced onion and grated carrot 6 minutes.

  2. Stir in the flour and cook one minute.

  3. Whisk in the broth and milk and bring to a gentle simmer.

  4. Add the broccoli cut into small florets and simmer 12 minutes until very tender.

  5. Mash some of the broccoli against the pot, or blend part of the soup for a smoother texture.

  6. Off the heat stir in the cheddar and dijon until melted. Season well and serve with bread.
